Coconut Chutney

Coconut Chutney:

Ingredients :

  • 1 coconut
  • 1 bunch coriander
  • 1 bunch mint leaves
  • 6 tablespoons of mustard oil
  • 6 green chillies
  • 2 tablespoons of ginger and garlic paste
  • 2 teaspoon salt
  • 5 limes
  • 1 teaspoon thyme
  • 4 teaspoon coriander cumin powder
  • 1/2 teaspoon red pepper.
  • 3 tablespoons of brown sugar

Open coconut and save water, peal skin from coconut and clean, finely shred coconut and add coriander and mint leaves and green chillies and blend, add water as needed to blend properly,  now add 3 tablespoons of mustard oil, mix well, add water from the coconut if needed, add all the other ingredient, add the juice from all 3 limes or more, and mix again.  Finally add the remaining oil and mix again.

Serve as a dip or make sandwiches.
